First up is 3 ingredient Chicken Tacos! Yep, that's it!
You will need:
Frozen Chicken breasts
16 0z jar of Picante sauce (your fav kind)
and a packet of taco seasoning
That's it!
Place your frozen chicken in the crock pot
in a bowl, mix picante sauce and taco seasoning until blended
pour over chicken
cover and cook on high 4-6 hours
Once it's done, shred with a fork and build your tacos!
I like to pair mine with roasted asparagus

Chicken Tortilla Soup
Ok so if you're family is like mine, there will be left over chicken from the tacos. So the next night it's the perfect night to use that leftover chicken and make Chicken Tortilla Soup. I found this recipe on a website when we lived in the tundra for a while and its so easy and yummy! I'll link to the website at the bottom.
You will need:
The leftover shredded chicken from the chicken tacos or a rotisserie chicken
chicken broth
1 can cream of chicken soup
2 TBSP taco seasoning
1 can diced tomatoes
1 can black beans
1 can corn
1 can diced green chiles
Combine chicken broth (I use a 32 oz box and I use most of it but use however much you like. Their recipe only calls for 1 can), cream of chicken, & taco seasoning in a pot on medium heat & whisk together until blended.
Add the rest of the ingredients (drain the corn and beans)
Mix well and heat on medium heat stirring often for about 20 minutes.
Serve with Toppings of your choice
We use, avocado, shredded cheese and crumbled tortilla chips
I also like to serve this with cheese quesadillas
take a tortilla and place it in a pan, place shredded cheese on one half and fold the tortilla over to close...cook and flip until cheese is melted
